When I host a group of folks to race, I usually serve home made salsa and chips.
here is the recipe for a great, minimal cook salsa:

chop and combine the following:
8 red, ripe tomatoes
1 sweet "Vidalia" onion very fine chop.
1 red bell pepper (remove insides)
1 green bell pepper (remove insides)
2 japelano peppers (remove the insides)
3/4 cup of FRESH cilantro (leaves only)
2 Tbs balsamic vinigar
the jiuce of 1 lime

when you have this combined in a large glass bowl, ask you T.M. were to find a can of whole kernel corn, go get it and do the following:

open and drain the can, then find a skillet and melt a medium sized pat of butter, poor in the can of drained corn and saute untill it starts to turn brown on the edges.
combine this into the bowl and refridgerate for one hour.

enjoy......

any other ideas?

Sounds good! Maybe add a dash of Cayenne for a little more heat. :devil: rr

Cayenne is fine, I prefer Tabasco.

There is a Morton's product called "Hot Salt" that is good too.

You are making me very hungry also.........aaaaaaaaaaaaaaaah! That Salsa and Chips sounds so good right about now. Football season is coming! Did you know that all the Scoops Chips use only Nebraska corn? Yeppers it's true and I get to watch it grow. :) Corn is our friend. :)

At Thanksgiving & Chistmas time I make lots of Rich Fudge! Just buy the marshmellow cream bottles and look for the directions on the back. :thumbsup:

In a bowl, mix in the following:

Crab meat or cooked sausage
Cream Cheese
Shredded cheese of choice

Next, take some jalapenos, or habaneros (my faves), cut the tops off and remove seeds and membrane. Stuff with the mixture in the bowl. Place a piece of bacon or a shrimp over the top and use a toothpick to hold in place. Place the peppers in a rack to hold them up right. Put them in a med-hot grill, not being directly over coals or fire, you can use a drip pan if need be, and cook until bacon or shrimp is done.

I had these for the first time last week, and they are awsome!
