200° is the MAX temp for the Motor and ESC. Motor will loose magnetism and ESC will thermal and shut down. Run It!

If you put a larger pinion on your motor, you will get better performance from the motor and mak it more eficient. I run mine between 150-180 and the torque is quite impressive. You can get a fan to put on the esc if ou want. You can also turn down the timing on the esc and keeps the equipment alil cooler then you can add more gear.

Larger pinion will increase temps but your temps are currently very low. I aim for around 160 degrees.

Not necessarily. Running too small of a pinion will cause the motor to be wide open all the time causeing serious heat issues. I had that issue and ended up about 5 teeth higher than I started to cool the motor down. The rules of gearing a brushed motor are completely different with brushless... it's all about finding the sweet spot.
