the question I have is how big do I need (oz. torque) do I need ?

I assume your meaning steering servo, I've got buy with 130oz but definitely prefer 230+oz, Hitec has a $30ish 130oz that works, I currently use an $80 Hobbico at around 230oz. Those $'s are street price not retail :)

I was refering to a servo for the steering.

I run only the JR DS 8711 with a reciever pack or BEC

I run a jr9100t love the torque and that in conjunction with the super fast transit time i can wiggle the truck out of some pretty crappy spots , and always run a receiver pack or bec
