AMT makes a couple of Shelby Mustang Kits.
Kit # 6633 is a 1967 Shelby GT350 Mustang, and its a very nice kit with a decent 289.
Kit #6541 is a 1968 GT500 Mustang, and it has a couple of engine options, one is a 428CJ, The other is a 427SOHC.
You could bash the two kits together and come up with a very nice '67 GT500, just mixing parts and decals.
I have both kits, and have built each of them at least once in the past.
Both are very good replicas of Shelby Mustangs.
