How do you pros out there re assemble your cars after drilling the rivets off?
I have read about being able to use screws etc?
what is the best way and how is it done

I have a car that was given to me that someone drilled and tapped so that the car can be taken apart and reassembled without too much trouble. Personally, because I don't disassemble a lot of the cars I have customized after I have finished them, I like to use brush on super-glue. I put a little in each of the holes where the rivets were and I put a little along the edge where the body meets the base. Probably not as nice as the drill and tap method, but certainly quick and it does the job. Just my 2 cents.

Well, I cheat and use 2 part epoxy or JB Weld and use a silver marker to touch up the color. I'm lazy!

I stick with JB weld...no pun intended :)
the tap/screw method isnt my cup of meat
I use the drill and tap method, then reassemble with screws. Check this thread and scroll down a couple of posts. I talk a little bit about the brand of screws and taps I use. Keep scrolling down because some of the other members give some more good advice when tapping.

BTW...that JB weld method looks pretty good. A lot cleaner than I thought it would look.

I use 2/56 button head socket screws from Enco. I drill off the rivit without going to far then drill a pilot hole for the tap run a 2/56 tap and you are good to go. I also use JB and epoxy sometimes.
