Sorry this has gone without an answer for a few days...
The short story is that electricity runs through the wire wound around the three stacks of the armature (the part that spins inside the can). This provides a magnetic field around 1/3 of the armature that will pull it to the next magnet in the can creating rotation of the armature. This obviously happens very fast. In a stock motor for example, there are 27 turns around each stack. It takes the electricity a certain amount of time to complete the 27 turns before it moves on to the next stack. Modified motors have fewer windings so that the elecricity spends less time on each of the three stacks. The result is higher rpm. Since there are fewer windings the armature can have a thicker wire as well, carrying more juice.

I can't tell you what is best for you. Maybe you have some friendly local racers (or local hobby shop) that can suggest a motor to match your vehicle and skill level.
